California Fresh Fruit Kebobs with Lemon and Cayenne

Preparation Time:  15 minutes

Number of Servings:  12



Ingredients:
6 ripe pluots (a cross between a plum and apricot - can't find them? use plums), halved and pitted
6 ripe peaches, halved and pitted
6 ripe nectarines, halved and pitted
2 lemons, juiced
1 tsp cayenne pepper
 mint sprigs (optional)

Directions: Cut each half of fruit into thirds. Place fruit in medium bowl, add lemon juice and cayenne pepper; mix well. Marinate fruit for 1 hour. On a skewer, alternate fruit wedges; chill. Garnish with mint sprig, if desired.


Curry Chicken Stew
___________________________________________________________

Ingredients:
2 teaspoons olive oil
12 boneless, skinless chicken thighs (about 1 1/2 pounds)
salt to taste
freshly ground black pepper
1 cup chopped onion
3 cloves garlic, minced
1 1/2 teaspoons curry powder
1 1/2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 medium butternut squash, peeled, seeded and cubed
2 medium russet potatoes, peeled and cubed
2 medium turnips, peeled and cubed
1 cup low-sodium chicken broth
2 cups canned chopped tomatoes with their juices
2 tablespoons chopped fresh cilantro leaves

Directions:

1. In a large soup pot or Dutch oven, heat 1 teaspoon of oil over medium-high heat. Season the chicken with salt and pepper. Brown the chicken on both sides, about 4 minutes per side, and transfer to a platter.

2. Turn the heat to medium and heat the remaining oil in the same pot. Add the onion and cook for 5 minutes. Add the garlic and cook for 1 more minute. Add the curry powder, cumin and cinnamon, and cook, stirring frequently for 1 minute.

3. Add the chicken, squash, potatoes, turnips, chicken broth and tomatoes and simmer until the chicken is tender, about 25 minutes. Season with salt and pepper and sprinkle with cilantro. Serve in warm soup bowls.



Strawberry Red Smoothie

(serves 2)                                           

Ingredients:
8 large strawberries
1/2 banana
1 organic orange
3 pineapple slices
1 medium cup of pure apple juice
1 medium cup of crushed ice

Directions:
Place all ingredients (except ice) in blender and blend for approx. 30 seconds. Next add the ice and blend until your preferred texture. Serve immediately for best results. Perfect for breakfast or a snack!
 
 
Turkey Burgers

(12 patties)

Ingredients
3 pounds ground turkey
1/4 cup seasoned bread crumbs
1/4 cup finely diced onion
2 egg whites, lightly beaten
1/4 cup chopped fresh parsley
1 clove garlic, peeled and minced
1 teaspoon salt
1/4 teaspoon ground black pepper

Directions:
In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
Cook the patties in a medium skillet or a bbq grill over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).
 
 
 
 
Mexican Style Baked Fish

(Serves 4)

Ingredients:
1/3 cup light sour cream
1 tablespoon lemon juice
1/2 teaspoon chili powder
1 pound orange roughy or red snapper fillets
1 1/4 cups crushed corn chips
2 tablespoons butter or margarine, melted
Avocado slices (optional)
Tomato slices (optional)

Directions:
Combine sour cream, lemon juice and chili powder. Dip fillets in this mixture and dredge in corn chips, coating well. Place fillets in a lightly greased 13 x 9-inch baking dish. Drizzle with butter. Bake at 450 degrees F for 12 to 15 minutes or until fish flakes easily when tested with a fork. If desired, serve with avocado and tomato slices.
